Attendance. 

Today! Oct 5 2021

Review of kitchen safety and outer wear protocol. 

1. Tie hair back, no loose clothing, wear an apron. 

2. Wash Hands!  

3. Head Chef's only at the stove. Which we will not need today.

4. Ovens - will not use today!

5. No licking kitchen items! EVER!!!!!

Each group will have a paper copy.

Note: We will do final stage - baking - tomorrow :) Reminder: 20 Q Quiz tomorrow - Kitchen Safety, Protocols, Salmon Field Trip Questions. 

Review of list of roles and responsibilities for each cooking group. 


Group Roles - Head Chef, Prep Cooks x 2, Recipe Manager/Dishwasher

Head Chef - Coordinates, Cooks, E.g. mixes all prepped ingredients & uses the stove, cleans all surfaces post cook, assists with putting dry dishes away.
Prep Cooks - Organizes and places materials out prepped and ready for the Head Chef, and assists with drying dishes at the end of the lab and putting away the dishes. 
Recipe Manager/Dishwasher - reviews paperwork day of lab with group (recipe review) and ensures the recipe is followed by all group members. Collects materials from main teacher station. Washes dishes. 

TASK: Select a new Head Chef for your group. Head chef to come up and write student name and position under correct lab station.

Instructions - Half way through number 1 to halfway through 4. 

Next:

*Review towels and what each are used for. 
Counter clean
Dish Wash
Dish Dry 
Dry hands ONLY with paper towel. 

*Review of location of aprons. (Where mitts are at your station). When your group is ready and has all aprons on and personal items prepped (hair back, no baggy clothes etc). 

* Wash hands AGAIN!

*Be ready for Apron Inspection by Ms. H or Jenn. 

Once inspection complete:

*Gather of location of supplies & product. Only Dishwasher/Recipe Manager will do this. 

Reminders: Once Done Stage 1 Prep.

Head Chef - Pls request a sticky note from Ms. H and I will place the name of your group on your pan to place in the fridge for baking tomorrow Wednesday Oct 6th 2021. 

Dishwashers - pls ensure you utilize the two sink cleaning method. I or Jenn will place your bleach in your 'dip sink.' Place dishes on rack (get from under your sink) then Prep Cooks - please dry your dishes. 

*Leave water in the sinks re: cleaning cutting boards and knives. Remember safety protocol when washing knives! NEVER throw the knife in the sink instead lay the knife facing out by the sink safely. Dishwasher to wash knife with blade away from them outside of the sink. Dip & Rinse. 

Head Chef - can assist with drying and putting away dishes upon completion. 

Final steps - once all dishes are clean and put away, please spray your counters with diluted bleach solution as well as your desks. Be careful of clothes during this stage. Recommend leaving aprons on.

After Clean Up: Please place your dirty aprons, towels, rags in the dirty apron hamper (box at the front of the room).

Sit quietly with your group at the end.  

GET COOKING! 

Oct 6 - Wednesday Mr. G is in da house!

Baking Prepped Apple Crisp's (Item 4 & 5 of instructions on our recipe above).

Murdoch will have preheated ovens to 350F.

Head Chef's Only - please collect your crumbles your stations completed from Jenn/Murdoch. 

Take the plastic off the top.

Place crisp's in oven (middle rack)

Place baking tray underneath (bottom rack) to catch any spills. 

Bake for 40-50minutes. Set a timer - use your phone or microwave timer for 35 min to check on your crisp. It should be brown & bubbly if it is ready to go. 

When head chef's take their crisps out of the oven - USE OVEN MITTS! Place hot crumble on top of the stove - NOT ON THE COUNTER. 

When head chef's are splitting up the crumble into bowls for their group members - use an oven mitt to hold the side of your crisp while you use a large spoon to divide up your crisp for all group members.

Head chef's will then use a orange large tray bucket (located at the teacher large mid station on the sides) to put all bowls of crumble into and bring to the teacher large mid station for ice cream dole out by Jenn/Murdoch or Mr. G. We only have 1 large tub of ice cream so don't get too crazy lol. 

Dishwashers to clean dishes after eating complete. All group members to assist with drying and putting items away. 

WHILE YOUR CRISPS ARE BAKING! 

You will need to complete your Foods 8 20 Q Quiz (located inside Teams in Assignments) and also your Apple Crisp Reflection Assignment 4 (located inside Teams in Assignments)

Remember - use Chrome to login to your Office365 then go to Teams - this works best.

If you have any issues ask Mr. G or Jenn or Murdoch for assistance.

Once complete - also check to see if you have not submitted any of our other assignments on Teams Assign 1-3
